Egg and Mustard Sandwich

The one dish that can become a busy person's go to meal is a sandwich. It can be made extremely healthy and filling, even substituting it for lunch or dinner on the go.
This is one of my favourite sandwich recipe that I use when I am running late and need to get a protein rich meal ready in under 20 minutes.
Ingredients

Boiled eggs, whole, 2

Boiled egg white, 1

Bread, 2 slices

Butter, 1 tsp (can substitute with olive oil)

Pepper, 1-2 tsp

Mustard powder (crush mustard seeds, if powder not available)

Sugar, 1 tsp

Salt, to taste
Method

In a bowl, use a fork to break the boiled eggs into tiny little pieces.

Add all other ingredients into the bowl and mix well.

Apply a generous amount on a slice of bread and cover it with another.

Cut into triangles and serve.
Serve with a side salad for lunch or dinner.
