Summer Quinoa Salad

Ingredients

Quinoa, cooked, 100g

Chickpeas, boiled, 100g

Cucumber, chopped, 1 medium

Carrot, grated or very finely chopped, 1 medium

Dried Cranberries, 2 tbsp

Jalapeños, 1 tbsp, optional

Coriander, finely chopped, 1 tbsp

Mint leaves, finely chopped, 1 tbsp

Red Chilli Flakes, 1 tsp

Salt, 1 tsp

Olive oil, 1 tsp
Method

Mix all the ingredients except the olive oil in a salad bowl.

Drizzle the oil on the salad.
Tip:

Refrigerate the cooked quinoa and chickpeas for a few hours to enjoy as a cold salad.
