Easy Tofu & Capsicum Stir-Fry
Ingredients

Firm Tofu, 200g

Green Capsicum, 1 large

Onion, 1 medium

Garlic, 2-3 cloves

Oil, 1 tsp

Chilli Flakes, 1 tbsp

Mixed Herbs or Orgegano Seasoning, 1 tbsp

Salt, to taste
Method

Cut onions and capsicum into thin slices.

Add oil, chopped garlic in a pan. Allow the garlic to cook slowly without burning for 30 seconds.

Add onion and capsicum and cook until soft. You can sprinkle water at this point to avoid the vegetables from burning or sticking to the bottom.

Once they are slightly cooked, add salt and other seasoning.

Add cubed tofu and mix well. Keep on low heat for 1 to 2 minutes.

Turn off the heat and serve with rotis or make them into rolls.
